Acetic acid is a saturated carboxylic acid containing two carbon atoms and is an important oxygen-containing derivative of hydrocarbons. Its molecular formula is C₂H₄O₂, with the structural formula CH₃COOH, and its functional group is the carboxyl group. As the main component of vinegar, glacial acetic acid is also commonly known as acetic acid. For example, it primarily exists in the form of esters in fruits or vegetable oils, while in animal tissues, excretions, and blood, glacial acetic acid exists as a free acid. Ordinary vinegar contains 3% to 5% acetic acid.
